Easy to Make Veggie Lasagna

These past couple of months I have been going through my grandmother’s and my husband’s grandmother’s old recipes. I stumbled across this recipe for Simple Veggie Lasagna and decided to try and make it. Both of our Grandmother’s have past away in the past several years and I thought it would be really neat to go through their recipes and make a cook book to be able to recreate some of their old recipes.  I also want to be able to pass down these recipes to my children.  As I have been going through them I have been making the recipes to see if they are something my family will eat or not.

My family has never eaten lasagna without meat in it before but this recipe was a huge hit! It was super simple to make and it was a healthy option for my family to eat! I chose to use fresh ingredients in the recipe for the broccoli and carrots but you are more than welcome to use frozen if you would like.  I was able to throw this lasagna together in just a couple minutes and then place in the oven.  That is a huge saving grace for someone like me who is very tight on time each day!

Simple Veggie Lasagna

Simple Veggie Lasagna

Ingredients

  • 9 Lasagna Noodles (Boiled and Cooked)
  • 2 cans Tomato Sauce 8oz. each
  • 1/2 teaspoon Minced Garlic
  • 1/4 teaspoon Dried Oregano
  • 1 head Broccoli (Cooked until Tender)
  • 1 cup Carrot (Shredded)
  • 15-16oz Ricotta Cheese
  • 1/4 cup Parmesan Cheese (Grated)
  • 1 cup Mozzarella Cheese

Directions

Step 1
Cook Lasagna Noodles according to back of Package. At the same time cook your fresh broccoli until soft.
Step 2
Preheat Oven to 350 Degrees
Step 3
In Small Bowl, Combine the Tomato Sauce, Garlic, and Oregano. Set Aside
Step 4
In a Large bowl, combine the Broccoli, Carrot, Ricotta Cheese, and Parmesan Cheese
Step 5
In a 9x13 baking dish you will take 1/2 cup of the tomato sauce and spread on bottom of the dish.
Step 6
Place 3 Cooked Lasagna Noodles on top. Followed by 1/2 the broccoli mix and 1/2 cup of tomato sauce.
Step 7
Place another 3 noodles on top. Followed by remaining broccoli mix and another 1/2 cup of tomato sauce. Top with remaining noodles and remaining tomato sauce mix. Sprinkle Mozzarella Cheese on top.
Step 8
Bake for 45 minutes at 350 degrees.
