Homemade Zucchini Bread Recipe

This time of year I always end up with a ton of zucchini and can never figure out what to do with it all!  I always end up making a ton of zucchini bread because my kids love it!! They don’t even realize that there is zucchini in it!! If you don’t tell them it is good for them then they will try it and most of the time actually like it but if I ever say that there is a vegetable or anything remotely healthy in it, it becomes a battle.  This recipe I got from my grandma who has been baking this bread as long as I can remember.  Every year she would bring some over for my family to eat.  Eventually my mom got the recipe from her and started baking it too.  As soon as I moved out of the house this was one of the first recipes I asked my family for because it is such a hit!

Homemade Zucchini Bread


  • 2 cups Zucchini (shredded)
  • 3 cups flour (Unbleached)
  • 1 cup Sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 3/4 cups applesauce (Unsweetened)
  • 2 eggs (Non-hormone/antibiotic preferred)
  • 1 teaspoon baking soda
  • 1/3 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon baking powder


Step 1
Preheat oven to 350 degrees
Step 2
Combine zucchini, applesauce, egg, oil, and vanilla together in large bowl
Step 3
Add in the flour, sugar, baking soda, salt, cinnamon, and baking powder and mix well
Step 4
Divide the dough into 2 medium size loaf pans
Step 5
Cook for about an hour or until no longer doughy on the inside
