Homemade Spagetti Sauce (with Garden Tomatoes)

This was my first year with a garden at my new home!  I was very busy moving in so I didn’t get nearly as much planted this year as I had hoped and then my chickens went through my garden and destroyed pretty much everything else that I had actually planted.  The one thing that seemed to survive was my tomato plants!  I only had four of them this year but they are producing A LOT of tomatoes.  My daughter and I had just went out yesterday and picked a whole bowl full of cherry tomatoes and I already had a large bowl inside so I decided we had to find a way to use some of them up before they went bad.

The kids had been wanting pasta for awhile so I decided to try and make up some homemade spagetti sauce.  I only had about 45 minutes to have this made though to get my kids to their sports practices and every recipe I pulled up online wanted you to let your tomatoes simmer in a crockpot for around 6 hours!! This wasn’t an option for me so I decided I would just kind of wing it and create my own sauce and luckily it turned out great!!  My whole family loved the sauce!

Homemade Spagetti Sauce with Garden Tomatoes

Serves 6
Misc Child Friendly, Freezable, Pre-preparable, Serve Hot

Ingredients

  • 2lb Garden Tomatoes
  • Garlic Salt (To Taste)
  • 8oz Organic Mushrooms (Mine came in 2- 4 oz. Cans)
  • 1lb Ground Beef (Cooked)
  • 1 box Veggie Pasta Noodles
  • 1 teaspoon Parsley
  • 1 Medium Onion (Chopped)
  • 1/4 cup Olive Oil

Directions

Step 1
Wash Tomatoes and remove any stems. Then take a large pan of water and bring to a boil. After boiling add in your tomatoes and leave for about 1 minute for cherry tomatoes and 2 minutes for larger ones.
Step 2
Remove tomatoes from water and allow to cool for several minutes. When they are cool enough take the skin off of them. At this point it should be easy to remove them.
Cook ground beef in a skillet until browned at this point also and drain.
Step 3
Add tomatoes, parsely, olive oil, and garlic salt, mushrooms, onions, and cooked ground beef into a skillet and cook on low-medium heat for about 25 minutes.
Step 4
Cook your pasta noodles and when those are soft remove from heat and pour spagetti sauce mixture over.
Step 5
Enjoy!
