Homemade Chocolate Chip Zucchini Cookies

After making what seems like a million loaves of zucchini bread I still had left over zucchini this week that needed to be used up.  I had thought about just freezing the shredded zucchini and saving it to make some more bread later on but I know that if I put it in my freezer that chances of me ever going back in there, unthawing it, and using it later were slim to none!! I just ended up throwing out a ton of it from last year after the only thing my garden really produced in the horrible drought and heat of last summer was zucchini.  I ended up with so much I didn’t know what to do with it all!

I decided to go ahead and turn some of the zucchini into my kids favorite thing to eat; Chocolate Chip Cookies!!  I used a pretty basic chocolate chip cookie recipe and added the zucchini for an extra added health benefit.  (Trying to get my kids to eat more vegetables is a slow coming adventure).

Homemade Chocolate Chip Zucchini Cookies

Ingredients

  • 1 cup Chocolate Chips (*We use Enjoy Life Brand*)
  • 1 cup zucchini (Shredded)
  • 1/2 cup Vegetable Oil
  • 1 egg
  • 1/2 cup Sugar
  • 1 tablespoon vanilla
  • 1/3 cup Honey
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups Flour (Unbleached)

Directions

Step 1
Preheat Oven to 350 degrees
Step 2
Mix together all the wet ingredients with a blender
Step 3
Add in the dry ingredients one at a time leaving the chocolate chips for last
Step 4
Use a large metal spoon to make cookies
Step 5
Bake for 10-12 minutes or until no longer doughy

  1. Mmmm… they look fantastic. Might try making these with some rice flour instead to make m gluten free. Ever tried that? I made zucchini muffins the other day with gram flour, and they were quite hearty.
