Gluten Free, Nut Free Chocolate Peanut Butter Cookies

I was trying to come up with a sweet treat to give my kids for Valentine’s Day this year when I decided to make some Chocolate Peanut Butter Cookies.  Now my son has a tree nut/peanut allergy so using regular Peanut Butter in our home is an absolute NO-NO!  We have found a really neat product called Wowbutter that we use instead and it is made with Soy instead of Peanuts!

I try to limit the amount of Gluten that my family eats too because I’ve read a lot of horrible effects that can come from eating it so I decided these cookies would be made without anything with Gluten!

Gluten Free, Nut Free Chocolate Peanut Butter Cookies

Serves 12

Ingredients

  • 1 Egg
  • 1 cup Brown Sugar
  • 1 teaspoon Baking Soda
  • 1 cup Soy Butter (We used Wowbutter)
  • 1/2 cup Cocoa Powder
  • 1 tablespoon Vanilla Extract

Directions

Step 1
In a large bowl, combine all ingredients starting with the dry ingredients and then adding in the egg and vanilla extract.
Step 2
Mix until well blended. The dough will be quite stiff at the end to stir.
Step 3
Place in refrigerator until chilled. (About one hour)
Step 4
Take a spoonful of dough and place on a cookie sheet. Use a fork to push the cookies out flat and bake at 400 degrees for about 8-10 minutes or until the cookie is just starting to brown.

  1. Substitute with your favorite butter and you can get great cookies with this recipe!
