Chocolate Peppermint Cookies Recipe

I love the Holiday’s because I absolutely love Baking!  I usually end up making way to many sweets for my family but I don’t usually make things like this the rest of the year so it is a treat for them!

This recipe started out by accident!! 🙂  I originally went to the grocery store the week before Thanksgiving in search of Pumpkin Hershey Kisses because I was going to make Chocolate Pumpkin Cookies to take to my In-Law’s Thanksgiving.  Well when I got to the store it was already overrun by Christmas stuff and they had already gotten rid of their Thanksgiving/Fall flavored candies 🙁  My kid’s saw the Peppermint ones and wanted to try them so we decided to turn these into Chocolate Peppermint Cookies instead!

The kids ended up loving these so I guess it all worked out!! 🙂

Chocolate Peppermint Cookies

Chocolate Peppermint Cookies

  • 2 1/2 cups Flour
  • 3 Eggs (Organic)
  • 2 cups Sugar
  • 1 teaspoon Vanilla (Organic)
  • 3/4 cups Butter (We use Earth Balance (dairy Free))
  • 1 cup Chocolate Chips (We use Enjoy Life (Dairy, Nut Free))
  • 24 Hershey Peppermint Kisses

Step 1
1. In the microwave melt the chocolate chips and the butter together until melted. I did it for 3 minutes in my microwave. Depending on the strength it may take longer or shorter. Be sure to stir the chocolate when you pull it out so that it melts completely.
Step 2
Add Sugar, Eggs, Vanilla, and Flour together. The batter will get very tough to stir once all the flour is in.
Step 3
Place the bowl in the Refrigerator for about 30 minutes to help set.
Step 4
Remove the dough and take a spoon and place a spoonful of dough onto the cookie sheet. You do not need large balls because these will spread a little.
Step 5
Bake at 375 degrees for about 10 minutes. Remove from oven and place a peppermint kiss in the center of each one before placing cookie on a cooling rack.
Step 6

  1. Chocolate and Peppermint are a perfect combo this time of year. And they look so festive. #HomeMattersParty
