I love the Holiday’s because I absolutely love Baking! I usually end up making way to many sweets for my family but I don’t usually make things like this the rest of the year so it is a treat for them!
This recipe started out by accident!! 🙂 I originally went to the grocery store the week before Thanksgiving in search of Pumpkin Hershey Kisses because I was going to make Chocolate Pumpkin Cookies to take to my In-Law’s Thanksgiving. Well when I got to the store it was already overrun by Christmas stuff and they had already gotten rid of their Thanksgiving/Fall flavored candies 🙁 My kid’s saw the Peppermint ones and wanted to try them so we decided to turn these into Chocolate Peppermint Cookies instead!
The kids ended up loving these so I guess it all worked out!! 🙂
Chocolate Peppermint Cookies
- 2 1/2 cups Flour
- 3 Eggs (Organic)
- 2 cups Sugar
- 1 teaspoon Vanilla (Organic)
- 3/4 cups Butter (We use Earth Balance (dairy Free))
- 1 cup Chocolate Chips (We use Enjoy Life (Dairy, Nut Free))
- 24 Hershey Peppermint Kisses
|1. In the microwave melt the chocolate chips and the butter together until melted. I did it for 3 minutes in my microwave. Depending on the strength it may take longer or shorter. Be sure to stir the chocolate when you pull it out so that it melts completely.|
|Add Sugar, Eggs, Vanilla, and Flour together. The batter will get very tough to stir once all the flour is in.|
|Place the bowl in the Refrigerator for about 30 minutes to help set.|
|Remove the dough and take a spoon and place a spoonful of dough onto the cookie sheet. You do not need large balls because these will spread a little.|
|Bake at 375 degrees for about 10 minutes. Remove from oven and place a peppermint kiss in the center of each one before placing cookie on a cooling rack.|
